Culinary and Wine Program

The Culinary and Wine program teaches theory, basic nutrition, hotel and catering management, stock flows, hygiene, food and beverage management, catering theory and the rules of commercial kitchens. Students are taught to prepare full course meals combining both traditional and gourmet dishes, according to Jewish dietary law. Cooking sessions start with the proper use of knives and equipment, progress to stocks and sauces, meat and poultry preparation, salads and cold sauces, buffet presentation, basic pastry, then diary cuisine, followed by ethnic cooking and cooking for Pesach. Kashrut and Hebrew language classes are included in the program. Thursday classes include theory, Hebrew language, Kashrut, class trips and special projects.

Patisserie Program

The Patisserie program teaches baking theory, pastry and confectionary skills, chocolate and cake decorating, breads, dough, gateaux, tarts, fillings and sauces, icing and decorative techniques. Kashrut and Hebrew language classes are included in the program. Guest chefs, tours and trips around Israel are also included in the 7 month course. Classes are held in the kitchen Sunday through Wednesday. Thursday classes include theory, Hebrew language, Kashrut, class trips and special projects.

**Please note that the 7 month program is taught In English. Other classes are taught in French.
